Malzemeler/Ingredients:

1 adet buyuk boy patates/ 1 large potato

3 adet havuc/ 3 carrots

1 adet sogan/ 1 onion

Hazirlanisi/ Preperation:

Patates ve havuclari yikadiktan sonra kabuklarini soyup irice dograyin. Tencereye alin ve ustlerini gececek kadar su koyun, iyice yumusayana kadar pisirin. (Yaklasik 30 dakika) Ayri bir tavada cok az zeytinyaginda dogranmis sogan ve sarimsagi kavurun. Patates ve havuclar ezilecek kivama gelince fazla suyu bosaltin, sogan ve sarimsagi da tencereye ekleyin. Baharatlari da ilave ettikten sonra catal veya ezme aleti ile tum malzemeleri ezin. Firini 180 derecede isitin. Hazirladiginiz pureye elinizle kofte sekli verip ortasina peynir cubuklari veya kucuk bir parca kasar peyniri, mozarella, dil peyniri, vs. koyun ve kapatin. Yagli kagit serilmis bir tepsiye aralikli olarak dizin ve 15 dk. pisirin. Dilerseniz galeta ununa da bulayabilirsiniz.

Wash,peel and cut into large chunks the potatoes and carrots. Put potatoes and carrots in a large saucepan, then cover with cold water. Bring to a boil, then reduce heat, and cook for about 30 minutes, or until both vegetables are very tender. Add 2 tablespoons olive oil to another saucepan and add onions. Saute over medium-high heat until onions are starting to caramelize. Add the garlic and cook another 2 minutes.  Pour the excess water from vegetables, add onion and garlic, salt, pepper and cumin into it and mash until the mixture is fairly smooth. Preheat oven at 180 degrees. Form the dough into ball, put a cheese stick or mozeralla into the center and roll the dough. Place on baking tray and bake for 15 minutes.

Ben hindistancevizi yagi tercih ediyorum, cunku daha besleyici, hafif ve saglikli buluyorum. Siz dilerseniz baska bir yag tercih edebilirsiniz. Ben hic seker kullanmiyorum. Bal ve kuru meyve yeterli oluyor. Size de bu sekilde oneririm. Saglikli bir ogunu seker ilave ederek mahvetmek istemezseniz tabii. Kahvaltida, ara ogunlerinizle sut, yogurt, badem veya soya sutleriyle tuketebilirsiniz. Afiyet olsun.

Very healthy and very tasty recipe. These measurements are flexible. You can add more honey if u prefer sweeter, add more dried fruits, if u don’t prefer cinnamon, ignore it or if u want to be naughty add some chocolate drops. Be creative, feel free.I like to use coconut oil because it’s full of nutrients and light, but you can use any healthy oil you like. I never use sugar. Honey and dried fruits are enough to sweeten the granola. I suggest you too not to use sugar if u don’t want to ruin your healthy snack. Serve it with milk, almond or soy milk, or put it in yogurt at your breakfasts or snack times. Bon apetite.

Hindistancevizi/coconut 

Hazirlanisi/Preperation:

Firini 180 derecede isitin. Erimis hindistancevizi yagi, su ve bali karistirin. Diger tum malzemeleri genisce bir kapta karistirin. Sivi karisimi yavasca kuru malzemelere yedirin ve iyice karistirin. Yapiskan bir karisim olacak. Yagli kagit serilmis tepsiye dokerek 20 dakika pisirin. Her 5 dakikada firinin kapagini agip kasikla malzemeleri karisitirin. Hava almayan bir kapta, kuru ve serin ortamda 2 hafta kadar saklayabilirsiniz.

Preheat the oven to 180º.  Mix melted coconut oil, water and honey. Combine all the other ingredients in a mixing bowl and slowly pour the liquid mixture. Use your clean hands to mix well. It will be sticky. Spread the mixture on a baking sheet and bake for 20 minutes until toasted. Stir the mixture with a wooden spoon every 5 minutes. You can store this granola in an airtight container in a cool, dry place for up to 2 weeks.

Un, kabartma tozu ve tuzu karistirin. Bir kaba eleyin. Ortasini acin. Sivi malzemeleri koyun, iyice yogurun. Yumusak ele yapismayan bir hamur elde edene kadar yavas yavas un ekleyin. Hamuru biraz dinlendirdikten sonra, hamurdan ceviz buyuklugu parcalar kopartip ortasina lor peynirini koyun ve yuvarlayin. Galeta ununa bulayin, firin tepsisine dizin. Onceden isitilmis 180 derece firinda yaklasik 20 dk. pisirin. 

   

Taze Kekik ve Limonlu Biscotti/Fresh Thyme and Lemon Biscotti

Taze kekik ve limonun uyumu gercekten inanilmaz. Piserken etrafa yaydigi koku zaten en bastan bu tarifin iyi olacagi sinyallerini vermisti 🙂 Biscotti cok severim. Bu tarifi bundan sonra daha sik yapacagim gibi gorunuyor. Sizlere de siddetle tavsiye ediyorum. / The combination of fresh thyme and l emon is unbelievable. You can understand that the recipe will be successful from the great smell while baking the biscotties.  I love biscotti so much. Malzemeler / Ingredients:

  • 3 su bardagi un / 3 cups flour
  • 1 paket kabartma tozu / 1 package baking powder
  • 2 yemek kasigi dogranmis taze kekik / 2 tablespoons minced fresh thyme
  • 150 gr esmer seker / 150 gr brown sugar
  • 2 limon kabugu rendesi ve suyu / lemon zest and juice from 2 lemons 
  • 60 gr oda sicakliginda tereyagi / 60 gr butter at room temperature
  • 2 yemek kasigi sivi vanilya / 2 teaspoons vanilla
  • 2 yumurta / 2 eggs

Hazirlanisi / Preperation:

  1. Firini 170 derecede isitin. Preheat the oven to 170 degrees.
  2. Bir kapta un, kabartma tozu ve taze kekigi karistirin. / In a bowl, whisk the flour, baking powder and fresh thyme. 
  3. Ayri bir kapta seker, limon kabugu rendesini elinizle iyice ovun. Tereyagini ilave edin. Mikserde orta hizda krema kivamina gelinceye kadar karistirin. Vanilyayi, yumurtalari ve limon suyunu ekleyin ve yine orta hizda tum malzemeler iyice karisana kadar cirpin. / Take another bowl and mix the sugar and lemon zest with your fingers. Add the butter and beat with a mixer at medium speed until well combined. Add the vanilla extract, lemon juice and eggs. Beat again at medium speed until all the ingredients are combined.
  4. Mikseri dusuk hiza getirip unlu karisimi ilave edin ve yine tum malzemeler birbirine karisincaya kadar cirpin. / Take the mixer to low speed and slowly add the flour mixture. Mix until incorporated.
  5. Hamuru iki parcaya bolun ve yagli kagit serili firin tepsisine alin. Hafifce islattiginiz elinizle hamurlara dikdortgen sekli verin. / Divide the dough in half and transfer to the baking sheet. Using wet fingers, shape each dough as a rectangle.  
  6. Yaklasik 45 dakika pisirin. / Bake for 45 minutes.
  7. Hamurlari firindan alin ve 10 dakika oda sicakliginda dinlendirin. / Remove from the oven and let cool for 10 minutes at room temperature.
  8. Firinin derecesini 150 dereceye dusurun. Hamurlari verev sekilde 2 cm kalinliginda dilimleyin. Dilimleri izgara firin teline dizin. / Reduce the oven temperature to 150 degrees. Cut the dough crosswise about 2 cm thick slices. Take them to a wire rack.
  9. Tekrar firina alin. 10 dakika bir tarafini 10 dakika diger tarafini iyice kuruyana ve uzerleri hafif kahverengilesene kadar pisirin. / Return to the oven and bake for another 20 minutes (10 minutes for each side), until they are dry and the color turns to golden brown.
  10. Iyice soguduktan sonra hava gecirmeyen bir kaba alip uzun sure saklayabilirsiniz. Afiyet olsun. / When the biscotties cool completely, you can store in the airtight container for a long time. Bon appetite!

Firinda Pilic / Oven Baked Poussin

Yaninda patates salatasi ve izgara sebzeler ile servis edeceginiz lezzetli bir tavuk tarifi. Eti cok az oldugu icin porsiyonluk hazirladim. Asagidaki malzemeler 1 adet pilic icindir. Afiyet olsun / It is a delicious chicken recipe that you can serve with warm potato salad and grilled vegetables. As they are too small you can cook one for each person.  The ingredients are for one poussin. Bon apetit! 

Malzemeler/Ingredients:

  • Kisi basi 1 adet kucuk pilic (yaklasik 350gr’lik) / 2 poussin (small chicken) per person (aprox. 350 gr)
  • 2 dis rendelenmis sarimsak / 2 cloves of garlic (shredded)
  • 1 yemek kasigi zeytinyagi / 1 tablespoon of olive oil
  • Tereyagi / Butter

Hazirlanisi/Preparation:

1. Firini 200 derecede isitin. / Preheat the oven to 200 degrees.

2. Pilicleri gogus kisimlari altta kalacak sekilde kesme tahtasina alin. Mutfak bicagi ile sirtindaki kemigi boynuna kadar kesin ve cikartin. / Put the poussin breast side down on a chopping board and with a kitchen scissors, cut down the backbone, starting at the neck end and remove it.

3. Tahta cop sisleri capraz bir sekilde kanatlarindan bacaklarina gecirin. / Skew the chopsticks from the wings to the thighs.

  • 200 gr nutella / 200 gr nutella

HAZIRLANISI/ INSTRUCTIONS:
– Firini 170 derecede isitin. Preheat oven at 170 degrees.
– Bir kabın icine pudra sekeri, nisasta ve vanilyayı eleyin. Ortasini acin ve yumurtalari ve oda sicakligindaki margarini koyun. Once yumurta ve margarini  elinizle iyice yogurun. Sonra kati malzemelerle birlestirin ve yogurmaya devam edin. / Sift icing sugar, starch and vanilla powder in a mixture bowl. Open the center and put the margarine and eggs. First combine margarine and eggs with your hand and then mix with dry ingredients and knead. 
– Kabartma tozu ve unu da eleyerek karisima ekleyin ve yogurmaya devam edin. Hamur ele yapismayacak kivama gelene kadar azar azar un ilave edin. / Again sift baking powder and flour (slowly) into the mixture and knead until you have a smooth dough. 
– Fırın tepsisine yagli kagit serin ve hamurdan ceviz buyuklugunde parcalar kopartin. Yuvarlayip tepsiye dizin. 20 dakika pisirin./ Place a baking sheet onto your baking tin. Roll the dough into walnut size balls and place on cookie sheet. Bake for 20 minutes.
– Nutellayı ve sivi yagi benmari usulu eritin./ Place nutella and oil in a heat-proof bowl, and set it over a saucepan of simmering water, stirring occasionally. 
– Corn flakesleri irice kirin./ Crush the corn flakes into big pieces. 
– Pisen kurabiyelerin ust kisimlarini once nutellaya sonra misir gevreklerine batirin. Sogumaya birakin. / When your cookies done, dip the top of your cookie with nutella then dip into the cornflake crumb. Set aside and wait for cooling down. 

Enginarli Ispanakli Cheesecake/Artichoke Spinach Cheesecake

Eger bir seferde bitiremezseniz, uzerine cok az zeytinyagi gezdirip firinda 15 dakika kadar isitabilir ve tekrar tekrar bu keyfi yasayabilirsiniz. Yaraticilik size kalmis belki kuru domates veya biraz dogranmis zeytin de eklenebilir. Guzel bir sarap esliginde haslanmis brokoli, kereviz saplari ve ince uzun dogranmis havuc ile servis yapabilirsiniz. Simdiden afiyet olsun.

  • 1 su bardagi dogranmis ispanak / 1 cup shredded spinach
  • 1 su bardagi krem peynir / 1 cup cream cheese
  • 1 su bardagi ricotta peyniri veya lor peynir / 1 cup ricotta cheese
  • 120 gr ezine peyniri / 120 gr feta cheese
  • Yarim su bardagi iri iri dogranmis enginar kalbi / 1/2 cup of artichoke hearts (chopped)
  • 1 buyuk dis sarisak (rendelenmis) / 1 large clove of garlic (minced)
  • 2 adet yumurta / 2 eggs
  • 1 adet yesil sogan / 1 chopped green onion

Tum malzemeler oda sicakliginda oldugunda en iyi sonucu alirsiniz. Use all the ingredients at room temperature for the best result.

Alt taban icin / For the cheesecake crust:

  • 100 gr (yaklasik 1,5 paket) cizi kraker / 100 gr salty crackers
  • 50 gr eritilmis tereyagi / 50 gr melted butter
  • DIlerseniz dogranmis taze kekik veya biberiye / Fresh chopped rosemarin or oregon can be used
HAZIRLANISI/ INSTRUCTIONS:
  1. Firini 175 derecede isitin. / Preheat your oven to 175 degrees.
  2. Ispanak ve enginarlari yikayin ve suyunu elinizle sikarak iyice suzun. / Wash spinach and artichokes and be sure to fully drain both. Squeeze with your hand if necessary. This prevents moisture.
  3. Kalibinizi hafif yaglayarak hazirlayin. / Prepare your cake with lightly greasing with butter.
  4. Cheesecake’in alt tabani icin krakerleri ezin ve erimis tereyagini ekleyin. Kek kalibinin tabanina bastirarak yerlestirin. Firinda 10 dakika pirisin. For the crust, crush crackers and combine with melted butter. Spread evenly at the bottom of the cake pan and bake for 10 minutes.
  5. Krem peynir, ricotta ve catalla ezdiginiz ezine peynirini mutfak robotunda iyice karistirin. / Combine cream cheese, ricotta, and feta in your food processor.
  6. Yumurtalari teker teker ilave edin. Arkasindan ispanak, enginar kalbi ve sarimsagi da ekleyerek dusuk devirde cok az karistirin. / Next add the eggs one by one, spinach, artichoke hearts and garlic and gently mix.
  7. Son olarak dogradiginiz yesil sogani da karisima ekleyin. / Lastly, add the chopped green onion into the mixture.
  8. Hazirladiginiz peynirli karisimi kek kalibiniza, krakerli tabanin uzerine dokun. / Pour the cheese mixture onto the crust.
  9. Yaklasik 50 dk pisirin. / Bake approximately for 50 minutes.
  10. 15 dakika bekleyin ve yavasca kalibtan cikartin. / Leave the cheesecake for 15 minutes to cool down and very gently remove from the pan.

Irlanda Ekmegi / Irish Bread

Malzemeler/Ingredients:

1 bucuk su bardagi tam bugday unu / 1 + ½ cups whole wheat flour
1 bucuk su bardagi beyaz un / 1 +½ cups all purpose flour
1 dolu cay kasigi karbonat / 1 teaspoon bicarbonate soda
¾ cay kasigi tuz /¾ teaspoon salt
¾ su bardagi oda sicakliginda sut+1 cay kasigi elma sirkesi / ¾ cup milk at room temperature+1 teaspoon apple cider vinegar 
¾ su bardagi siyah bira / ¾ cup dark beer
1 cay kasigi bal / 1 teaspoon honey
Arzuya gore kurutulmus feslegen ve 2 dis rendelenmis sarimsak / Dried basil and 2 cloves shredded garlic (optional)

 

Hazirlanisi/Preperation:

Firini 190 derecede isitin.
Tum kati malzemeleri eleyerek buyuk bir kaba alin. Kasikla iyice karistirin ve karisimin ortasini acin.
Sivi malzemeleri ortaya dokun ve elinizle yavas yavas tum malzemeleri harmanlayin. Sadece karistirin yogurmaniza gerek yok.
Hamuru hafif unlanmis tezgaha alin. Elinizle top sekli verin.
Yine hafifce unladiginiz firin tepsisine hamurunuzu yerlestirin ve hamurun ortasina keskin bir bicakla carpi isareti yapin.
40 dakika kadar pisirin. En az yarim saat oda sicakliginda beklettikten sonra ekmeginizi kesebilirsiniz. Afiyet olsun .

Preheat the oven at 190 C.
Combine all the dry ingredients in a medium bowl, make a well in the center.
To the center, add the milk, vinegar, honey and the beer.
Combine all the ingredients with hand until you have a rough dough.
Take the dough onto a lightly floured surface and shape it into a ball. No kneading required.
Take the dough on a baking sheet and with a sharp knife make a cross in the center.
Bake for 40 minutes. Place on a cooling rack. wait at least 30 minutes to cut. Enjoy.

Siyah Birali Cikolatali Kek / Chocolate Cake with Dark Beer

Malzemeler/Ingredients:
300 g tereyagi/300g butter
150ml siyah bira/150 ml dark beer
250 g un/250g plain flour
Kabartma tozu/baking soda
100 g kakao/100g cocoa powder
375 g toz seker/375 g sugar
3 yumurta/3 large eggs
Vanilya/ vanilla extract
150ml sivi krema/150ml liquid cream

Ust krema icin/For the frosting:
200g bitter cikolata/200g dark chocolate
125g tereyagi oda sicakliginda/ 125g butter at room temperature
225g mascarpone cheese
225g elenmis pudra sekeri/225g icing sugar, sifted

Hazirlanisi/Preparation:

Firini 180 derecede isitin. 23 cm’lik yuvarlak kek kalibini yaglayin ve tabanini pisirme kagidi ile kaplayin. Tereyagini eritin. Icine kakaoyu ve birayi ekleyin, tel cirpici ile karistirin. 10 dakika sogumaya birakin. 

Genis bir kapta un, kabartma tozu ve sekeri karistirin. Ortasini acip, yumurta, krema, tereyagli karisim ve vanilyayi ekleyip yine cirpma teliyle tum malzemeleri iyice karistirin. Hazirladiginiz kek hamurunu kek kalibina dokun ve firinda yaklasik 1 saat pisirin. 

Cikolatali krema icin cikolatayi benmari usulu eritin. Tereyagi ve mascarpone peynirini mikserde cirpin. Erimis cikolatayi ilave edin, tekrar cirpin. Son olarak pudra sekerini de azar azar ekleyerek dusuk devirde tum malzemeleri karistirin. 

Kekiniz soguyunca kremayi kekin uzerine surun.


Preheat the oven to 180°C, grease a 23cm cake tin with a removable base and line with a disc of parchment paper. Melt the butter in a saucepan and then whisk in the cocoa powder and datk beer.  Remove from the heat and set aside.

In a large mixing bowl combine the flour, baking soda and sugar.  Make a well with the back of a spoon and pour in the melted butter mixture along with the eggs, sour cream and vanilla extract. Pour into the prepared cake tin and place in the oven for 1 hour or until a skewer inserted comes out completely clean. When the cake is baking, make the frosting.

To make the frosting, melt the chocolate in a bowl placed on top of a saucepan filled with a little water boiling over a low heat. Remove from the heat to cool for about 10 minutes. Place the butter and mascarpone cheese in a bowl and beat until fluffy and combined. Mix through the melted bitter chocolate and then gradually sift and beat in the icing sugar until you have a smooth, spreadable mixture. To assemble the cake, place it on a cake stand and spread with frosting

1 su bardagi barbunya / 1 cup red kidney beans
1 adet pancar / 1 beetroot
2 çorba kasigi zeytinyagi / 2 tablespoons olive oil
1 su bardagi domates puresi / 1 cup tomato puree
4 su bardagi su / 4 cups water
2 adet defne yapragi / 2 bay leaves
Tuz, karabiber, kuru nane / salt, pepper, dried mint

Hazirlanisi:

Barbunyayi bir gece onceden islatin. Uzerini gececek kadar suda 20 dakika haslayin. Hasladiginiz suyu dokun. Barbunyalarin uzerine 4 su bardagi suyu ve domates puresini ekleyin. Defne yapraklarini atin.
Tum sebzeleri kup kup dograyin. (minik minik olacak, biraz sabir istiyor :))
Sogan, pancar ve havuclari tencereye ilave edin. 20 dakika daha pisirin.
Daha cabuk pisen sebzeleri yani patates, kabak ve kereviz saplarini ve yapraklarini ekleyin. 40 dakika daha pisirin.
Pisirmesi biraz uzun suruyor ama pistikce tatlar birbirine geciyor ve corba lezzetleniyor.
Tuzunu, karabiberini ekleyin, atesten almaya yakin zeytinyagini ilave edin. Defne yapraklarini cikartin.
Corbaniz hazir, afiyet olsun.

Preparation:

Add red kidney beans to the pan and cook about 20 min. with 2 cups water. Pour the water and add 4 cups water and tomato puree on to the beans. Add bay leaves.
Dice all vegetables. It takes quite long, be patient 🙂
Put onions, beetroots and carrots into the pan. Cook about 20 min.
Add potatoes, zucchini, celery stalks and leaves and cook 40 min more at medium low heat or all the vegetables become tender.
Season with salt, pepper and dried mint.
Last add olive oil. Remove bay leaves.
